If the backup was deleted or overwritten, you don't. Not unless you have a backup of your computer from when the iTunes backup you're looking for was still present. Do you?
When you delete an app, it will delete the accompanying data. If you sign out of an app, that should not affect your data, but you can sign back in again as long as you did not delete data.
If you experienced a problem with backing up to a 3rd party cloud solution, your problem is with that company, and you would need to contact them for support.
You say you made a backup of the iPhone, then tried to restore a backup but were unsuccessful. Why is that, what happened when you tried to restore?

Backing up does not delete any data fro the device at all.
Sounds like you restored from a previous backup instead of backing up.

Actually I wanted to back up data on it’s cloud for which I signed up account for the same. And as I thought that it would automatically back up. So I made a full back of my iPhone on itunes.
Unfortunately the next day I found that I was left with no data anymore in CamScanner. And I am also unable to restore them from iTunes as I had backed up my iPhone after signing up the account of CamScanner. I am really worried about it.
I’ll be very grateful if you can help me to get back my lost data. Thank you.
I think CamScanner is not reliable apps. It should not be allowed in Apple Apps Store. Because I came to know that when I tried to backup my data stored in CamScanner in it’s own Cloud (CamScanner’s Cloud), backup is failed due to limited space (Only 200 mb) provided by CamScanner on free of cost. It’s okay. But when I signed out my CamScanner Account, apps had automatically deleted all my data from apps. It’s not fair.
I was not aware about this in that time. So I had Immediately made full backup of my iPhone on my laptop. I made many effort to retrieve previous/old backup on iTunes but not succeeded. I am really worried. So I would like request all community members to help me if you have any solutions.
I’d also like to attract a serious attention of Apple Company on this issue.
