I'm trying to back up my iPad and iPhone to my iPad, but all I see is the attached screen.

Are there any updates to Catalina that you haven't applied? Have you tried restarting the phone and your a Mac?

Yes, I saw that when I was trying to find out about my problem.
When I look at the finder sidebar and click on my iPad it shows the info that I attached on the first submittal. It gives me no options other than to Restore iPad.
All update were previously applied.
Earlier this afternoon, I restarted my iPad and that fixed everything.

Is your iTunes up to date?
You have to be running Catalina then, so are you using the Finder to backup? Take a look at this.
