fingerprints listing on ipad
Under settings and fingerprints I notice I have three listed fingerprints. However, I am the only user of this iPad. Should I delete all but one?

That is totally up to you - I have three different fingers listed and I did that purposely as I am not always holding my iPad the same way, so sometimes I use this finger and the next time a different finger/different hand.
