when you remove someone from a group in imessage are they notified you have done this and can they see the previous content in the group chat?

No, they do not get a notification and you cannot "retroactively" delete them from previous messages.

So they can still see the previous messages in that group chat?

I don't know of anything you can do without access to their device to delete the conversation from their device.
