Is there any way of rearranging apps while using List View?

No, there isn't. They are listed alphabetically in List View. The only view you can arrange to your desire is the Grid view. You can arrange them on the Watch face, or it is easier to do in the Watch app on the iPhone.

As you have observed, the list view is in alphabetical order, and there is no alternative arrangement method.
You can let Apple know that you would like another user option by using Apple Watch Feedback.
