You'll need a paired iPhone with the Watch, as that's a requirement for Watch. This is required for the configuration and management and updates for the Watch. That all happens via the iPhone.
To operate as requested here, Dexcom would need to provide an app for Watch, and the monitor and the app running on the Watch would need direct communications, and continuous access. (And the Watch would need the battery life to support the associated communications necessary, and to keep the app sufficiently active.)
Based on a web search for dexcom g6 "Apple Watch", it appears that the answer to your question is "no".
This based on the Dexcom info: https://www.dexcom.com/faq/can-i-view-my-dexcom-g6-cgm-data-apple-watch
And particularly on the following text: Your Apple Watch will only communicate with your compatible iPhone, not the Dexcom G6 Transmitter. You will not receive alerts, alarms, and other notifications on the watch unless it is connected with your compatible iPhone. For example, if you have your watch on and you go out, but leave your iPhone at home, you will not receive any CGM updates.
As this app and its associated configuration involves Dexcom software apps and hardware, you'll be better served by checking directly with the folks familiar with the glucose monitor and the associated apps. They'll know what is supported, what requirements exist, and what changes and updates are planned. Folks around here, not so much.

What kind of updates are you referring to. Software, or information updates? If you do not already have an Apple Watch, understand that you cannot use one without an iPhone to activate it. The Apple Watch is still an accessory to the iPhone. It is not a stand alone device.
