How do you transfer Apple Watch to a new owner?

My spouse is getting a new Apple Watch and is giving me her old one to replace my Series 1 watch, which just died when the screen popped out of its frame. So we want to transfer her data to the new watch, and then I want to transfer stored data from my old watch to the watch she is giving me. Would appreciate any guidance from the community about how to do all this.

See the instructions here, What to do before you sell, give away, or trade in your Apple Watch, or buy one from someone else - Apple Support This is what your wife needs to do. When she unpairs the Watch from her phone, it will create a backup, and when she activates the new one, she restores that backup. The same for you, your Watch backs up to your iPhone.
