Keychain -- need to learn

I would like to reset all my passwords to something more secure. I'm looking at my keychain (to determine how many web form passwords I might have) and I see a lot of stuff I don't understand. What is the difference between a web form password and an application password? Why do some have @ icons and some have pencil icons? Is there a place for me to start to learn all this stuff?
