That’s not iTunes - it’s now called Music. Admittedly it’s iTunes-like. Your iMac is current.

Connected iPhone to iMac via usb, opened up iTunes in iMac, but iPhone not recognised. Tried with old SE and iMac recognises this phone and can sync
