Invoke Apple Pay Not Working
Since the IOS 13.5 update you can no longer invoke Apple Pay from double clicking the power button. I'm using IPhone 6S.

It works just fine on my iPhone. Have you done a forced restart since you updated your phone?

Then call Apple. The link I provided is an Apple Support document, which says for iPhone with Touch ID (iPhone 6s is a Touch ID phone), you place your finger on the touch ID, hover the phone over the card reader in store and wait for the confirmation your payment was accepted. For iPhone with Face ID, you double tap the power button to bring up Apple Pay.
If Apple has provided incorrect information on how to use Apple Pay on their phones, I'm sure they'd be glad to hear from you.
One more thought (not that you actually deserve any help from me), but if you go to Settings > Wallet & Apple Pay, is there a setting for Double-Click Side Button? If there is, is it turned on?

In researching this (it's been a long time since I owned an iPhone with Touch ID), it appears double tapping the power button isn't correct. See below:
