Email not displaying correctly
Recently, emails from one contact have started to display as below:

The email displays fine on my desktop using Win 10 Outlook but using the apple mail app on iphone, ipad, and icloud mail on the web the emails from the one contact display as shown above. The XXX is where I removed a name and email address included in the email. The name and email address were shown correctly. Since it is only emails from this contact with this problem and the emails from this contact come across fine on my Win 10 desktop using Outlook, my guess is that it is not a problem on the sender's side but on my side. Others on the mailing list ( there are 90 emails addresses on the distribution list) are not having this problem. I have uninstalled and reinstalled the mail app on the iphone (11 max) with no success. Also, my iphone and ipad are both running the latest IOS and Ipad OS versions (both 13.5).
Also, when I reply to the email and include the original content, the original content that appeared as shown above is now correctly formatted in the reply.
Any ideas on what's going on?
