I cannot activate my Apple Watch Series 5 (Cellular)
I'm on iPhone 11 Pro iOS 13.5 and Watch OS 6.2.5
I restored the watch and erased the data and the data plan
I am stuck in the connection process
it displays the message "activation error" (as in the picture)
I am referred to my operator's customer service or Apple Care
Neither gave me a concrete answer

I think that's what made the problem
My carrier tells me he doesn't support esim
so he has no solution to offer me

So you don't use the cellular part of the watch?.
Try this;
Restart the phone and watch,phone first.
Tap Pair Apple Watch Manually on your iPhone. Next, tap the "I" button on your Watch"bottom right corner"which will bring up your device's name. Now you will see the watch name on the screen. On your iPhone, tap this name in the Devices list. Next, the Apple Watch will display a six-digit code. On your iPhone, type this code at the prompt. You’ll see the Your Apple Watch Is Paired screen. Now you can restore your Apple Watch from backup or setup as new.
Try this first;
Get the watch up and running first then;
Have you just bought this watch off somebody?.
What error message are you receiving?.
Have you tried manually pairing?
Have you tried contacting your carrier?,that's an error on the cellular side of the watch.
I'm afraid I'm out of ideas now,maybe time to let the apple store look at your watch when they reopen.
Sounds like it's something they may be able to help with.
