I received a new iphone 11 and had troubles migrating my information to my new phone and would like to start over from the “Hello” screen. Is this possible?

When I do that it does not take me back to the “hello” menu to start the migration setup process
When I do that it just takes me back to to standard home screen not the hello screen you get when you first turn on the phone
I was having trouble connecting to the server when logging into my Apple ID. And at the end of the migration I would get a fail error. So I tried to do it via iCloud but everything didn’t transfer over due to not enough server specs. I would like to try the direct transfer again.
