iMac Retina 5K, 27-inch, 2017 model

As the price of RAMs are getting cheaper, would it be possible to double the RAM capacity of iMac Retina 5K, 27-inch, 2017 model from the current specified maximum of 64GB to 128GB by installing four 32GB 2400 MHz DDR4 RAMs? Would there be any noticeable increase in speed or any negative impact on system stability?

According to Apple, OWC and MacTracker 64GB is the max.
