Open a Finder window and you should see "Applications" in the left pane unless you removed it. You can also click on the Finder's "Go" menu and enter "Applications" to open a Finder window showing your applications. You may also be able to locate the app by searching for "Quick Time" using Spotlight.
Launch QuickTime and check one of the menus for the option for "Screen Recording". There are various options for recording the whole screen, or a select window of an app.
