Hide Alerts

If you don’t have someone’s number saved and you put their messages on hide alerts. If you delete the conversation will you receive new messages from them? Or will you never be able to see messages from them again?

Hide alerts is only for that conversation thread and not for future iMessages from the same person.

What you are looking for is block iMessages. --> Filter and block messages on iPhone - Apple Support

If you have someone's messages set to HIDE ALERTS. Later you delete the conversation without resetting the alerts for that person. You will be able to see new messages from them. Remember that you did not block the person, you just hid the alerts.
