Help with adding workouts to iwatch

How do you go back to workouts started e.g you do a 200m run, then add a HIIT workout, then want to go back to the run to add more distance without starting a new run, then go back and add more to the HIIT?

This is from the Apple support document;

Combine multiple activities in a single workout

  1. Open the Workout app  on your Apple Watch.
  2. Begin your first workout—an outdoor run, for example.
  3. When you’re ready to start a different activity—like an outdoor bike ride—swipe right, tap , then choose the workout.
  4. When you finish all your activities, swipe right, then tap End.
  5. Turn the Digital Crown to scroll through the results summary.
  6. Scroll to the bottom and tap Done to save the workout.
