i received an iPhone 11 today in the mail. After activation when I send a text message my Apple ID is showing up instead of phone number. When I try to select my phone number it is greyed out with a spinning wheel next to it. I have signed out of Apple ID, turned iMessage off, restored factory settings, and turned phone off. Still doing the same thing. HELP!

I see that you're unable to select the phone number for iMessage because it's grayed out.
Follow the steps under "If you can't see or select your number in Messages or FaceTime" here: Add or remove your phone number in Messages or FaceTime – Apple Support.
