I want to erase my iPhone 11 Pro and then set it up as a new phone and download my data from my old phone

Had my phone stolen, I got a new iPhone 11 Pro. I couldn’t access my iTunes account for 3 days, so now I need to erase my new phone and set it up as new and then download my back up from my pc. How do I erase and then set up as new phone again. ?
