HTML Formatting:

If you're familiar with HTML, then you could probably compile the eMail using Rich text formatting. Rich text (HTML) format can include formatting, but the eMail may end up being unreadable to some recipients.

You might be able to tell your email client to display it with different line spacing, but Mail doesn't offer that.

Neither does Thunderbird, as far as I can tell.

By way of experiment just I tried composing with Rich Text in TextEdit, which will let you specify double and 1.5 line spacing, but when you Copy & Paste it into a Mail or Thunderbird message composition window, it disappears.

Maybe you could use HTML.

Oddly enough, that one is for line height, and not font size.

I just tried it in Thunderbird (which has an HTML editing pane) but it did not work. Could be a CSS thing.
