Welcome to apple support community. I understand that the previous owner of your iPhone 7 does not remember either his iCloud username and/or password.
I suggest you follow the article below.
Also, when an iPhone asks for an iCloud password, it usually shows part of the email that is associated with the Apple ID. That should help the previous owner know which email address is associated with his Apple ID.
