Do you have a single Audio Track selected? And the "Master" button is not clicked? If the Master Track is selected or a software instrument track, the knobs for the smart controls will not be shown.

But for a real instrument track you should be seeing the knobs, if the selection is like this Track and Controls selected:

If you click "Master"instead of "Track", the knobs will vanish:

If all selections are correct and you are still not seeing the knobs, the preferences file may be corrupted.

If parts of the user interface are missing, the GarageBand window may be too small. Or the dividing line between the controls and the track area may need shifting, or the preferences file needs trashing.

Try the instructions in this document: If GarageBand for Mac won't open or play back your project - Apple Support. (the paragraph "Reset GarageBand preferences"):

Reset GarageBand preferences
Resetting preferences doesn't affect your project files, presets, or patches. However, you do lose any custom preference settings you might have made.
Before resetting preferences, choose GarageBand > Preferences and note any specific settings you've made. That way, after resetting preferences, you can go back and reapply your custom settings. For information on different preferences, see GarageBand preferences overview in GarageBand Help.
To reset GarageBand preferences:
Quit GarageBand.
In the Finder, choose Utilities from the Go menu.
Open Terminal.
Paste the following command into terminal, and then press Return:

defaults delete com.apple.garageband10

If you ever updated from a previous version of GarageBand, also paste the following command into terminal, and then press Return.

defaults delete com.apple.garageband

Restart your computer.
After your Mac restarts, open GarageBand and try to reproduce the issue you were experiencing. If the issue no longer occurs, open GarageBand preferences and reapply your custom settings.
