Email instead of phone number for texts

Are you actually typing in the phone number, or the name (which lets the Messages app choose). Also, if this is a thread that was originated or responded to by the recipient using their Apple ID then the thread will continue using that original method.

The person you are sending to has not listed their phone number as a way to contact them.
