That would indicate you have one of the Invert options selected. In the Accessibility section, you should see the settings below.

Even if dark is on, it wouldn't make for example the Facebook App orange. I thought of this and tried it before I made the suggestion I made.

Go to Settings/Display & Brightness and tap on “Light"

I don’t know how to create screen shot, but as I was setting up my new se, somehow all the app colors changed to unfamiliar colors so I do not recognize them: gmail is black & aqua instead of red & white, Facebook is orange & black instead of blue... all are unfamiliar colors so I have to really to find & open them now
