Not a big fan of this TV app or Apple TV app or whatever you want to call it in the new operating system. Really miss the old iTunes interface.
I normally purchase my movies in HD and my TV shows in SD (saving space) but as I went to make my first purchases on the TV app I realized i can't see an option to change the resolution purchased for any content.
Even in movies that option doesn't seem to be available.
What am I missing?

No, only once. In the Tv App preferences. Then its set, and will download everything else in that quality.
You can set the download quality in preferences: Change Playback preferences in the Apple TV app on Mac - Apple Support

Choose the option (Best Available, Better, or Good) that works best with your computer.
Download Quality
Choose the option (Best Available, up to SD, or Smallest File) that works best with your computer’s storage space.
I would have to change it though if I want to do movies in HD but the TV shows in SD every time I purchased one or the other. Also since the TV app does not offer SD purchases I would still have to purchase the HD season to download the SD one.
