I have a shared iCloud Family Sharing however I’m not the host (adult). Based on my settings, it shows that my shared features for Purchasing Sharing is switched off. However, the host happens to know what I purchased in-app. My Ask To Buy is switched off. Is there happen to be another way the host could access my purchasing history?

Purchase sharing only "if you turn off purchase sharing, each member keeps their purchases, even though they were paid for by the family organizer" per - Family purchases and payments - Apple Support. If Ask To Buy is switched off for you, then you don't need approval to purchase items.
In Family Sharing, the organizer can see purchase history using their Apple ID, but won't see what other family members bought.
