Are there any good crash course to become an expert on numbers ? It's easy to find course about excel, but for numbers most websites focus on tips.

I guess you have used the User guide? It’s meant to be a ‘chrash course’.

For guidance, see the templates provided with Numbers, and the Function Browser (where you'll find at least one example of how to use every function supported in Numbers).
As for teachers, there are several available here in the Numbers community, but you do have to ask a question to get a lesson. ;-)
Your lab is right there on your desktop. You can perform as many experiments as you can think of, with no need to save the resulting file if it is not going to be of use to you.
And while the Numbers User Guide can be treated as a reference document, it also serves does well as a course guide that you can navigate from beginning to end, scanning parts that you are comfortable with (or will 'never' use) and digesting line by line in parts that don't make sense on first reading.

A guide is simply a textbook. Imagine going to school and getting a textbook per class with no teacher, lab or guidance. doesn't really help much. Thanks for your answer.
