It's not possible. Even in the Mail app you have to set the font for each outgoing separately.
Are you referring to creating the email online at iCloud.com or on Mac in the Mail app?
If it's the latter the font will only display on your end as each recipient sets the viewing font for their particular machine. And not all computers will have a the font you might choose.
In Mail's Fonts and Colors preference pane what you set will be what you get each time you begin to create a new email or view an incoming email.
If you send Rich Text email then you can format the content as far as bold, italic, underline, etc. and it will go thru that way if the recipient can view Rich Text email.
