This is not a question but rather a solution!
Numbers doesn't has Tab coloring feature. However, I figured a way to tag my tabs in order to distinguish its contents,, hopefully to help others.
Simply, add an emoji to the Tab name ☺️🟪🟩🟨👍
Simple way is that you go to system preferences/ Keyboard and click to show Input menu in menu bar, then from there you will have access to Emojis.
…and from there you will be able to place an emoji in the tab by double clicking it (the emoji, not the tab), or by dragging it from the character viewer to your document.
