My apple watch has been dying during my workouts even though the battery was at last 30% at the start of my 30-minute workout. Also, when I put it back on the charger, it starts up with about 30% battery instead of 1%. I have updated all the software and reset the watch multiple times but it keeps happening.

It sounds like you have an issue where your watch turns off at 30%. It sounds like you have taken some good steps to try and resolve this issue. I would suggest try unpairing the Watch and pair as a new watch to try and resolve this issue.
