I have finally discovered how to successfully install the nvidia CUDA driver 418.163 on my 2010 mac pro. The trick is that the CUDA preference pane must request the update (you can't install it yourself). I installed an old CUDA driver 9.0.214 and WebDriver-387.10.10.10.40.137 for the card. Immediately, the CUDA window in System Preferences requested 418.163, successfully installed it, and now my Quadro K5000 works fine.
