You can use iCloud to back up your iPhone and you won't need iTunes.

If you do not use iCloud or prefer to create a back up on a computer then:

You need iTunes to back up on a Windows PC
You need iTunes to back up on a Mac using macOS up to Mojave
You do NOT need iTunes back up on a Mac using macOS Catalina (You use the Finder)
