How do I download all my emails and apps from my old iPhone from ICloud

If you restore from a backup you should get back all your apps and their associated data - Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.
If you were previously using iCloud for your mail, then once you sign to the new device with your Apple ID/password and turn on Mail, then your mail will populate to the Mail app.

How do I down load all my apps from iCloud. I backed up everything from my old iPhone to the iCloud. I can not get all my emails and apps down loaded to my new phone
