Is there a way in Apple Mail to track if my email has been opened?
Mail does not incorporate that feature.
However, there is at least one third party product that claims the ability to add it to Mail:
Be advised I have not tried it, and also be advised the ability of such things to survive even incremental macOS updates depend on how motivated their developers are in supporting them.

I've been researching online since there are so many third party apps and finally found one that seems to be working great for me.
It's called Mailbutler, if anyone is interested.
If I was to discover that you were tracking my email and when I opened it I would never open another email from you. It is my business, no one else's, if and when I open my email.
BTW, just because you may determine when an email was opened does not mean the recipient read the email.
