HTML email signature disappears from Mail on Mac and MacBookPro

Apple Support don't support this apparently. I guess it's only an Apple app on two Apple products, so why would they, grr...

There are also settings in Mail that specify whether you should reply to a sender who sends you "straight" Plain text with a message limited to straight plain text.

Such replies can not contain the fancy HTML you created and stored. The signature will likely be omitted without generating an error message.

You seem to be spending a lot of time and effort trying to create something that many/most users will never see because for security reasons they have disabled html in email.
