Hi,
I have an iPhone 6 running iOS 13. I was wondering - if I factory reset it and it becomes like it was when it was taken out of the box, can I do that thing where you put the two phones together and have the apps download on the new phone? In addition, can I have all the information transfer/set up from my iPhone 5, or is it too old to set up this way?

Yes you can restore to factory settings if you can switch off Find My iPhone before that.

Does the iPhone 6 act as a new phone when factory reset?
Yes just like it came out of the box.
But it's still an iPhone 6, hardware doesn't change when you Reset to factory settings.
Can I use "Quick Start" to transfer from iPhone 5 to iPhone 6 or is iPhone 5 too old? Sorry I was unclear; I didn't know it was called Quick Start before.
No, iPhone 5 is pretty old.
Use your computer iTunes instead see above.
