I want to change my Apple ID and so I have changed the main screen in settings and it says the name which I want but when I send emails it still has the previous name I.e comes up Sam smith when the email sends not peter Thompson

If you are sending iCloud emails, changing the Apple ID email address doesn't change the associated iCloud email addresses. Log into your Apple ID to see what shows there for iCloud email addresses. You can't remove/change @iCloud.com, @me.com or @mac.com aliases. You can create a new alias to use for emails.
Have you checked to see what name is in your card in Contacts? What name is listed in your Apple ID?
I don’t want to change the email but the name that comes up above the email
