I still wear my original Apple Watch and at the time I purchased the stainless steel with the sapphire crystal display - I'll be looking at upgrading shortly and would still want SC, friends of mine have damaged their 5's with scratches and dings after banging the watches.. My screen is still perfect after 5-years...... do Apple still use SC for their screens?

It is used on the higher end models including Stainless Steel, Titanium and Ceramic. It is not on the aluminum models, they use Ion-X Glass.
