How can I remove an app from backup? I signed up to an app with the wrong email and I cannot deleted it to change it.

Just delete the app by holding down on the app icon until it wiggles then tap the X to delete it.
OK. I misunderstood what you were trying to do.
When you delete an app, it should delete the associated data and you should be starting all over again. However, that doesn't always seem to work. But, apps aren’t stored in iCloud anyway, your purchase history is stored in iCloud. So when you download an app again, it is downloaded from the cloud but associated with your purchase history. There is no way to go back to the App Store and download a “clean” version of the app.
You could try removing the app from iCloud backups first. Go to Settings>Your Name>iCloud>Manage Storage. Find the app in the list, tap on it and then delete the app data in the next screen.
Then go back one screen and look for that app in the list of apps under Apps Using iCloud. Find that app off so that it is no longer backing up with iCloud.
Then delete the app and download it again and see it the data is still there. If it is, the next thing I would try is to go through all of those steps again, but backup the device before reinstalling the app. Make sure that you have erased the data and disabled the app from backing up with iCloud. Download the app again and see if the data reappears.
If that fails, I’m out of suggestions other than to contact the app support and ask them for help.
The issue is when I try to reinstall it, the backup is on the cloud and it automatically reinstalls the wrong information. I tried to go to apps in the cloud and it’s not there. Perhaps if I delete the app, then do a backup that will solve the issue.
