Hello BTB72,

Thank you for reaching out in Apple Support Communities. We understand you'd like to know, how to pair two sets of AirPods to an Apple Watch. We can help provide you additional information.

You can use one set of AirPods at a time, that is paired to an Apple Watch. If you'd like to switch from one set of AirPods to another, you'll need to go in Settings > Bluetooth on the Apple Watch. From there, you can select the AirPods you'd like the Apple Watch to be paired to.

Here's two help articles with more information: Connect Apple Watch to Bluetooth headphones or speakers and Use AirPods and other Bluetooth accessories with Apple Watch

Kind regards.
