How can I save an email to my desktop on my iPad; I can’t seem to do that anymore since the last update or two.

You may move Safari pages to your iPad’s home screen. So you might use your mail server’s webmail (if they offer one) to view your message in Safari then move that to your iPad’s home screen.
How might you be attempting to “save an email to my desktop”?

Hah, I was thinking desktop computer, sorry. And I guess I used the term home page incorrectly.
when I get an email that I want to save on my desktop I was able to open it, read it, and save - an option was the desktop. Other options were the usual, forward, reply. It was so simple.
Thank you - but all I have is my iPad. This was never an issue before the upgrade(s). So annoying.
I can take the photo but as you know, it is never the same quality.
