When I hold down the side button I don’t get the power off slider

Do this then try again;

To force reset your Apple Watch, press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.

TURNING APPLE WATCH OFF I just got a new Apple Watch-Series 8.
