iCloud -- controlling what it holds

How do I stop iCloud from uploading ALL my documents and data?? I Clicked "documents and desktop" because I thought that merely enabled my ability to upload my choice of documents. But it is uploading EVERYTHING! Burned through my data cap! I had to disconnect wifi. Now I want out of iCloud, but I'm afraid it won't give me my documents back. Some of them have dotted-line clouds--does that mean they are still on my computer? Will I have to spend $$$ on data to get my documents downloaded to my computer again? HELP!!!

This what you asked iCloud to do. By design, it's all or nothing.

Note the highlighted section. This is how you will get "back" your documents. No data loss.
