how long ago did you delete this note?

When you delete a note, it is supposed to go into a 'Recently Deleted' folder for 30 days. If you are beyond that 30 days, I doubt you'll ever get that note back.

If you go into your notes list, up in the top left should be an option to go back < Folders

I do this, I see my iCloud Notes folder and a Recently Deleted folder. If you have the Recently Deleted folder, go into it and see if your note is there. If it is, select the 3 dots in the upper right, Select Notes, check the note you want to recover, select Move To... at the bottom left, then select the folder you want to move it back into

Is there a Recently Deleted folder? All deleted notes should appear there as long as you haven't deleted the note from within the note (by highlighting and deleting the content), if you have done the latter as far as I'm aware there is no way to get it back.

I should also add that if you don't see the Recently Deleted folder, then your note is likely gone
