Aloha,
You can edit your photos data including the names of people and more on your MacOS Photos app. (Not iOS) Take a look at this post: https://support.apple.com/guide/photos/add-titles-descriptions-and-more-phta4e5a733f/mac.

Open the People album for the person with the wrong name, find the photo, that should not be there, then ctrl-click or right-click the photos with the incorrect name and use the command "... is not in this photo". If you are viewing the faces thumbnails instead of the photos use "This is not ... " instead.
You may want to add the photo to a new album where you collect incorrectly named faces.
Then you can find the photo quickly to add the correct name to the face.
If the albums for two persons have become merged into one, you should not use the names from contacts to when correcting the names. They might just revert back. Try it this way: How to Correct Merged People Albums - Apple Community
OK... You've been helpful. Adding information to a photo is quite straightforward... but removing errant information has been quite challenging! I've eventually succeeded... but there's no way I could tell someone how it was accomplished!
But... thanks to all who tried their best to guide me!

It's a bit more complicated... I have a photo of one person for which 2 names appear: one is correct, the other exists as "unnamed." I am trying to remove "unnamed."
I'm stymied!
If you are seeing "Unnamed" below the faces circle of a photo you can simply type the name into the field, where it is showing "Unnamed". Pick the correct name from the list of suggested names.
The only complication in Photos on macOS 10.15 Catalina is, that Photos will not allow you to use the same name twice in one photo. If you have a photo of a person in front of a mirror, you can only name one of the faces.
And it is not possible at all to remove the "unnamed" circles from the faces of people we do not want to name. Photos does not allow us to discard detected faces, even if it it is not a face at all.
