iCloud storage

I recently changed to a new iPhone, so i backed my old one up and restored it from iCloud to the new one. Now I keep getting notifications that I’m running out of storage in iCloud. If I select the option to delete the backup of my old iPhone from iCloud will that also erase the stuff from my phone?

Deleting an old backup will not delete anything from your current device.

Correct. You already restored your new phone from the old backup. Any changes to your old backup will not affect your new phone.
