Is my new iMac 3 years old?
I just got a 21.5" iMac. "About This Mac" has the year 2017. What does the year refer to?

It’s the year of introduction of that particular hardware configuration. The first time those components and hardware specs were made available.
Rest assured it is a new iMac, its just using a configuration that has not changed since 2017. The entry level 21.5” iMac has been the same since 2017.
