Sustain pedal for Garageband Organ

I know real organs don't have sustain pedals, and neither do the Garageband defaults, but I'd like to record in using one. I found this screenshot, from @lifenoise a few years back, but I can't access these controls in Garageband. None of the terms mentioned can be found in the Help.


"By default the Vintage B3 organ plugin has the sustain pedal set SusPdlTemp. Change it to mod wheel or another CC# in the menu (see below). Then select the sustain pedal in the workspace. In the screenshot, the tone wheel organ channel strip>MIDI controller>64(sustain) has been selected. That should do it."
