If you want to delete the child account from Family Sharing: read this https://support.apple.com/en-us/HT201081

If you want to delete your Childs Apple ID, you'll have to contact Apple Support https://support.apple.com/en-us/HT204169 . Before doing this, sign that ID out first from everything it's signed in like iCloud, Face Time, iMessage, iTunes or App Store
