Spotify on Apple Watch
whenever I play music from Spotify on my watch it plays on my iPhone and I can’t switch it back to my watch.

That is because Spotify does not support the Apple Watch as a listening device.
Spotify has ONLY provided an Apple Watch app to remotely control the Spotify app on your iPhone.
You will have to discuss with Spotify if they ever intend to support the Apple Watch.
Pandora and Apple Music fully support the Apple Watch, for Streaming, offline playlists, and full Siri integration.
You can also transfer music you own from your iPhone to your Apple Watch for offline play.
